Like Champagne, it's made with two fermentations, and in this case it's kept 20 months on the lees. It's made with the local grape Mauzac, with a touch of Chenin Blanc. This is the Blanquette de Limoux recipe, as opposed the the Cremant de Limoux one, which can be made with Chardonnay and Pinot Noir. With its bready, brioche, yeasty nose, and delicious lemony, apply, brioche flavours on the palate, and excellent energy and length, you could absolutely think you were drinking Champagne.
